Soluble dietary fiber polydextrose, white or milky white noncrystalline powder, is a polymer of D-glucose with some bounded sorbitol and citric acid. It is resistant to digestion in the human small intestinal tract, but it is partially fermented in the large intestine leading to physiological effects consistent with dietary fibers. It is commonly used as a replacement to sugar, starch and fat in commercial cakes, candies, dessert mixes, gelatins, frozen desserts, puddings and salad dressings.
